La Cornue's wall ovens and vault ovens represent two entirely different philosophies of oven design — one modern and electric, one traditional and gas-fired — but both share the same need for annual maintenance to perform as their designers intended.
La Cornue Convection Oven Maintenance
The La Cornue Convection Wall Oven uses electric bake and broil elements with a convection fan for even heat distribution. Annual maintenance covers:
- Temperature calibration: cavity temperature measured at multiple setpoints with a reference probe and adjusted to factory specification if drifting.
- Convection fan inspection: motor bearing wear assessed by sound and rotation resistance; airflow checked with a handheld anemometer at the oven cavity.
- Element condition check: bake and broil elements visually inspected for hot spots, bowing, or surface oxidation that predicts imminent failure.
- Door seal verification: gasket compression checked around the full door perimeter; hinge tension verified to ensure positive door seating.
- Control and display test: all cooking modes activated and verified; error code history checked.
La Cornue Château Vault Oven Maintenance
The Château Vault Oven is a fundamentally different appliance — a gas-fired dome oven with a cast-iron vault and a burner system calibrated to produce La Cornue's signature radiant cooking environment. Maintenance is centred on the gas system and dome integrity:
- Vault burner inspection: burner orifice checked for restriction; burner assembly cleaned and inspected for wear.
- Thermocouple condition check: thermocouple output measured to verify it is within specification for proper gas valve operation.
- Gas valve function test: valve opening, modulation, and shutoff verified.
- Dome and enamel inspection: the cast-iron vault and enamel interior checked for chips, cracks, and discolouration that may indicate heat distribution issues.
- Gas pressure verification: manifold pressure confirmed to La Cornue's specification with a calibrated manometer.
Maintenance Schedule
Both oven types benefit from annual maintenance, or after every 500 cooking hours for heavy users. For Château Vault Oven owners who use the dome for regular roasting, a semi-annual inspection of the thermocouple and burner orifice is recommended — these components experience more thermal cycling than in a standard gas oven.
