What La Cornue Range Maintenance Covers

A scheduled range maintenance visit follows a comprehensive checklist for your specific La Cornue model. On a CornuFé Dual Fuel Range we verify oven temperature calibration across bake and broil modes, inspect and clean the sealed gas burner assemblies, test the spark ignition circuit, check the door gasket for compression and seal, and inspect the enamel cavity for condition. On a Château Gas Range we additionally check the gas valve operation, verify manifold pressure, and test the thermocouple or electronic ignition depending on the model's age and specification.

Oven Calibration

Over time, the RTD temperature probe in La Cornue's electric oven section can drift, causing the oven to run hotter or cooler than the set temperature. Even a 15°F offset is enough to affect baking results. Our calibration service uses a NIST-traceable reference probe to measure actual cavity temperature at multiple setpoints and adjusts the control calibration to factory specification.

Brass and Enamel Care

La Cornue's polished brass knobs and trim are functional components, not merely decorative. Loose brass fittings can affect gas valve operation; corroded brass contacts can affect ignition reliability. We inspect every brass component during a maintenance visit and advise on any that need attention. The vitreous enamel cavity is examined for chips and cracks that can affect heat reflection and food hygiene.

Gas Safety Verification

Every gas range maintenance visit includes a manifold pressure check with a calibrated manometer, visual inspection of all gas connections, and combustion quality verification (clean blue flame, no yellow tips). Gas leak detection is performed on every fitting using approved detection fluid.
