We remove the filters and clean them in a professional degreaser bath, restoring full mesh opening and filter efficiency. Filters that are beyond cleaning are replaced.
Blower Housing Inspection
Grease that makes it past the filters accumulates in the blower housing and on the blower wheel. This grease buildup reduces airflow, imbalances the blower wheel (causing noise and vibration), and creates a fire risk if it accumulates sufficiently. We inspect the blower housing at every maintenance visit and clean it when accumulation is found.
Blower Motor Condition Check
The blower motor bearing is assessed by sound and rotation resistance. A bearing that is developing wear will exhibit a slight roughness that is detectable before it causes an audible noise or motor failure. Catching bearing wear early allows planned replacement rather than emergency service.
Light System Inspection
Hood lights above a La Cornue cooking appliance operate in a high-heat, high-grease environment. Lamp condition, driver function (for LED systems), and switch contacts are all checked. Replacing a failing lamp or driver at a scheduled maintenance visit is far less disruptive than a lamp failure during an evening's cooking.

These filters have a finite capacity and must be replaced on schedule — a saturated charcoal filter allows odours to pass through without capture.
